I am not a fan of oils, except unrefined organic cold pressed coconut oil or flax seed oil. These are the only two oils that do not turn to trans fat under high heat. I see a lot of chefs even vegan chefs cooking with olive oil. No thanks! Your doctor may say otherwise. Yes, I read the published Harvard study about how coconut is saturated fat and I laughed, because so is avocado, and so are nuts! Nuts are brain food. I would rather eat nuts than salmon. There are good fats and bad fats. The same doctors who are against coconut oil are pimping animal meat, knowing well how much saturated fat is in a living body. Ask yourself, why does it take a heart attack for your doctor to say: "Go plant based." None the less, I make an exception for olive oil only when I make home made hummus. I only buy olive oil in very dark glass bottles as olive oil changes quality with light, and I'm definitely not interested in eating plastic.

Homemade chocolate (dates, almond milk, avocado and MTC oil) on top of two bananas with coconut whip, grater walnuts and coconut shreds. Delicious!

Squash zucchini soup. Add cumin on squash, zucchini and white onion, roast. Blend parsley, ginger, black pepper, turmeric with a spoon of Shiro miso and water.  Blend roasted veggies in water, then add to first mix. Serve hot or cold.

Thank you @aliciasilverstone for your fabulous steamed kale idea. Mine has minced raw garlic from our garden and a ginger miso Ponzu dressing with flax seed oil

I love that TJ Maxx and Marshalls carries European made pasta. Great! Unfortunately, US made pasta is unhealthy. This pasta salad is made with dark leafy greens and reds, roasted eggplant and Ponzu

Daily bread is not healthy. Potassium bromate strengthens dough and enhances elasticity, but it's a carcinogen. Ocasionally, I eat Ezekiel bread - no bromate. Orange chocolate brownie 

Based on Laura Miller's Raw.Vegan. Not gross! brownies this recipe is an original with only the healthiest ingreedients!  I love Laura Miller and her book Raw Vegan Not Gross! She is probably the one cookbook author I mostly gravitate to <3  I got the idea for this cake from her ganache brownie recipe. Almond milk, date water, sea salt, cacao  vanilla bean, coconut flour and for the topping , MTC oil, apple honey, sea salt, cinnamon and cacao. Grated orange grind and if you love glaze, mix dates with water and apple honey. So delicious  and goey !!

Vensgiving

VEGAN THANKSGIVING IS BEST

A truly compassionate thanksgiving is guilt free, kill free, and delicious.

On the left vegan turkey, roasted rosemary fingerling potatoes, cranberries, shroom gravy, yams, butternut squash, beets, onion, garlic and stuffing. Bottom left delicious veggie soup, carrot orzo and greens, on center stuffed cabbage Polish/ Hungarian / Czech style  and bottom right is vegan sausage in cellery veggie brine. To complete the delicious set up a delicious carrot cake and a strawberry cashew cake. I will share the recipe bellow. 

Both the carrot cake and the Strawberry has the same bottom.  In a food processor 5 dates, 2 cups of walnuts, some pecans, some cashews, your favorite gluten free non American crackers or cereal, nutmeg, cinnamon, cacao and sea salt, grated raw organic carrots  and a spoon of organic cold pressed unrefined coconut oil or MTC oil. Blend it until it looks like peanut butter. Very soft. Use a spring form, push it into it and flatten it, then bake for 5min to get the moisture out.  When that's done, let's get the topping: vegan cream cheese, 5 dates and coconut cream. Blend it and spread it all around the top. Add more grated raw carrots, and grated walnuts.

Same exact crust as the carrot cake. The cream is all cashews, coconut cream, 5 dates. Then organic strawberries sliced and spread on top. I sometimes cover it in maple syrup, but I wanted to keep the sweetness down so this is just what it is - a strawberry cashew cake. It's chilled so it tastes like ice cream on a trailmix. I hope you guys try it out and make yourself some!
